The 512 Truck is the beginning of a dream that both Rete and Geoff have had since the early days of their marriage of owning a food service business. In 2019, they sold their house in Austin, Texas and moved up to start the food truck, just in time for COVID to wipe out their savings and startup capital. Fast forward to 2022, around September, Rete gets a call from her parents. Her mom is wanting to make sure that she is taken care of and wants to help her get started with her food truck dream. With investment capital, construction commenced and right after taking possession of the trailer from the builder, tragedy struck. Rete’s mom had died of cancer before being able to hear of the successes and trials of running her first business. Now, Rete and her husband Geoff, who she tries to keep locked away in the kitchen for everyone’s own good, push forward honoring the memory of her mother and the gift she gave them.

The Boss Lady… Rete grew up around people that knew how to cook and learned how to create good flavor from her grandmother. Hosting brunches and cooking for a crowd intensified a hidden desire to start a small restaurant and a Food Network show about food trucks gave her the beginning of an idea.
Geoff St.Germain
Geoff grew up in a household where dinner wasn’t something to look forward to. Surprise, a mixture of rice, whatever vegetables were in the fridge or pantry, and a meat that was usually cooked to oblivion, was a regular dinner time staple and it was a surprise if it was edible. Somewhere around the age of 3, as the story is told, Geoff decided to make pancakes for breakfast… on the kitchen floor… This obvious attempt at culinary masterpiece was not seen for what it was, an interest in the culinary arts of course. Geoff loved watching cooking shows, marveling at chef’s tv shows such as Emeril Lagasse’s as a kid, always fascinated by the way dishes would be put together. It wasn’t until Geoff met Rete, that he had any idea that every day meals could actually taste good. Geoff promptly put on weight for the first time in his life, a little too much… After a 17 year career in IT ended, Geoff met Chef Melissa (ret.) and she introduced him to the culinary arts. Through their relationship, Geoff was introduced to new cuisine and cooking methods that ignited a passion for foods that had long since been dormant and unexplored. From how to properly season water for pasta to the introduction of tapas plating, Geoff was impassioned in a career for the first time in his life.
