Green Chili Coming

Yep! That’s right, Chef is working on a Green Chili recipe right now and will be debuted during our lunch service in November!

Lunch at the DMV

If you find yourself in south Jefferson County, come by the DMV/WIC office at 11139 Bradford Rd for the best pasta or Texas Red Chili. We are going to start positioning ourselves for lunches here and providing them to the area businesses and patrons of businesses in the Ken Caryl area, starting Thursday, October 31! We hope to see you there!

We are currently looking for a permanent evening location with high traffic and a parking lot. If you have any ideas in the area, please email Rete@the512truck.com and let her know where you think we might fit.

Times Change and So Does Our Menu!

We are pleased to announce the introduction of our latest menu item, Parmesan Garlic Pasta! This delicious, creamy pasta is the latest addition to our menu just in time for the winter months!

Also! We are pleased to announce that we will be regularly scheduled with Jefferson County offices around Jefferson County! We are looking forward to serving our communities civil servants and provide a 10% discount to all government employees with your employee badge.

Valley View Park

We are currently working with Foothills Parks and Recreation to get our trailer in the park to make up for last Tuesday. The Stony Creek HOA will be having their last Food Truck Tuesday this week. They are not apart of our donation program for Deer Creek Middle School. The football practice being held on Thursdays however, has asked that we be available for them. We are currently checking with Foothills to see what is required for permitting. We will be making up our last Tuesday’s cancelation this coming week. Look for a notice from the school in the coming days once we have our day scheduled.

The Weather in Colorado…

Sorry to all who expected us at Valley View Park today. We were watching the storm come in and the winds were going strong enough to damage to the window cover. And now, at 6pm, the winds are going yeah, but it’s not the storm we were expecting to come through and hammer us. We’re apparently still getting used to the weather and how wildly unpredictable it is… We’re working with Foot Hills Parks to get back out there and make up the day soon. In the south, when wind gets going like that with rain, its not something that moves through too quickly. Yes, we have our quick showers, but they aren’t something that blows through at 50 mile per hour and then everything is all done. It sticks around for a few hours at least..

Next week, Stony Creek HOA is having their final last Tuesday food truck in the park event. We are looking into alternatives to place our trailer in a different spot to continue serving the best Southern Mac and Cheese to the kids after school. We will post more information as the schedule is finalized.

Again, we apologize for the inconvenience and hope to see you at our next opening in the park for after school snack.

Getting Ready for September at Valley View Park

For the Month of September, The 512 Truck will be at Valley View Park in the Stoney Creek Subdivision serving afterschool snack, opening at 230 and closing at 7. If your child is anything like mine, within the first 5 minutes of getting out of school, the words, “I’m hungry” come forth. Well, we’re trying out a new spot and a new concept in the food trucking, providing a healthy and hearty afternoon snack with our 7 cheese Mac bake, pulled pork sandwiches, a small bowl of our Texas Red Chili, or put it the chili over Fritos for an awesome Frito Pie. Its got a little kick to it, but my daughter loves the chili on her Mac when she’s working on the trailer with us.

On a personal note, My Mother-in-law, before she passed away in May of 2023, she was died of cancer, but before that happened, she wanted to make sure that Rete and I were taken care of. Rete proposed that we start a food truck and help make our own security. She loved the idea and with the agreement of my Father-in-law, decided to fund our dream of having a food truck. Frankie, my Mother-in-law, had spent her life working as a teacher in the Austin Independent School District. It was something that she and I were able to connect over when I became a high school teacher. It is in the memory of her and to honor her dedication as a teacher of 20+ years of service, We will be donating 10% of our revenue to Deer Creek Middle School for all Tuesdays in the month of September. We are open to and hoping to extend the fundraiser till the end of the school year, if there is a demand for the best damn afterschool snack you could possibly get your hands on…
